Preheat oven to 350.
In medium bowl, whisk together flour, baking powder and salt.
In mixing bowl, cream together butter and sugar until fluffly
Add the ricotta, vanilla, extract or juice, and egg. Mix until smooth
Add the dry ingredients and mix just until it is combined. Don't over mix.
Spoon dough in 1 1/2 tablespoon portions on to parchment paper. Bake for 15 minutes. Tops will remain pale while the bottom turns a golden brown. Cool on a wire rack on parchment. Make Icing: whisk together all ingredients. Spoon over cookies. Add sprinkles if desired.
