Method
- Preheat oven to 350.
- In medium bowl, whisk together flour, baking powder and salt.
- In mixing bowl, cream together butter and sugar until fluffly
- Add the ricotta, vanilla, extract or juice, and egg. Mix until smooth
- Add the dry ingredients and mix just until it is combined. Don't over mix.
- Spoon dough in 1 1/2 tablespoon portions on to parchment paper. Bake for 15 minutes. Tops will remain pale while the bottom turns a golden brown. Cool on a wire rack on parchment.
- Make Icing: whisk together all ingredients. Spoon over cookies. Add sprinkles if desired.
