Pizza Crust

Makes two medium pizza crusts.

Ingredients
  

  • 1 tbls Yeast
  • 1 cup Water, warm
  • 3 tbls Sugar
  • 1 Egg
  • 1 lb Flour
  • 1 1/4 tsp Salt
  • 2 tbls Olive oil

  • 1 Bread Mixer Optional

Method
 

  1. Mix yeast and sugar in warm water. Let yeast bloom.
    Add egg and mix.
  2. Add flour to mixer bowl. Slowly add liquid ingredients. Mix until smooth. Dough should seem a bit dry.
  3. Drizzle bowl with oil. Knead dough in bowl for 2 minutes. Roll dough in oil so it won't stick to the bowl. Cover bowl and proof for 60 minutes or until double in size.
  4. Place dough on parchment paper. Pat flat and form into a rounded crust. Brush dough with olive oil.
  5. Preheat oven to convection 400. Bake for 10 minutes. Change to convection Low Broil. Broil until dough is golden brown. About 5 to 8 minutes.
  6. Remove from oven. Change to convection bake 425.
    Build pizza as desired. Place in oven for 10 to 15 minutes. If desired, put on low broil for a few minutes.
