Method
- Heat cast iron skillet to medium high heat. Add oil to brush bottom of pan.
- Add the Jalapeno peppers, onion and garlic to hot pan. Roast for about 5 minutes until lightly browned. Turn or stir frequently for even browning.
- Add water to pan. Add salt, cumin, and sugar - stirring to combine. Simmer about 1 minute. Let cool.
- Add Vinegar and cooled pepper mix. Add cilantro as desired. Blend until smooth.
- Season to taste with salt, cumin, or cilantro
