Jalapeno Hot Sauce

Quick easy, non-fermented sauce.

Ingredients
  

  • 1/2 lb Jalapeno peppers, about 6 large pepper
  • 1/2 cup onion, diced
  • 2 cloves Garlic, sliced
  • 3 dashes Liquid Smoke
  • 1/2 tsp Cumin
  • 1 cup Water
  • 1 tsp Sugar
  • 1 tsp Salt
  • 2/3 cup Vinegar
  • 1/4 cup Cilantro, roughly chopped More to taste
  • Oil, to coat the skillet

Method
 

  1. Heat cast iron skillet to medium high heat. Add oil to brush bottom of pan.
  2. Add the Jalapeno peppers, onion and garlic to hot pan. Roast for about 5 minutes until lightly browned. Turn or stir frequently for even browning.
  3. Add water to pan. Add salt, cumin, and sugar - stirring to combine. Simmer about 1 minute. Let cool.
  4. Add Vinegar and cooled pepper mix. Add cilantro as desired. Blend until smooth.
  5. Season to taste with salt, cumin, or cilantro
