Ginger Ale - Homemade

Ingredients
  

  • 1 cup Fresh Ginger, peeled and minced
  • 2 cups Water
  • 1/2 cup Sugar, honey, syrup, or other sweetener to taste
  • 1/4 cup Lime or lemon juice
  • Sparkling water

Method
 

  1. Combine ginger and water in a saucepan. Bring to a boil then lower to simmer for 30 to 45 minutes. Let cool. Strain liquid.
  2. Return liquid to pan. Add sweetener. Stir over medium heat until dissolved. Stir in Lime juice and cool completely.
  3. Fill glass with about 1/4 cup ginger syrup. Top with sparkling water and ice.
  4. Store syrup in refrigerator for 1-2 weeks.
