Cottage Pudding - Great Grandmother's Recipe

Old time white cake base for apple cake and a lot of fruit coffee cakes

Ingredients
  

  • 1/4 cup Crisco, Shortening
  • 3/4 cup Sugar
  • 2 Eggs
  • 2 1/4 cups Flour
  • 3 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 cup Milk
  • 1 tsp Vanilla

Method
 

  1. Cream shortening, sugar and eggs together.
  2. Sift dry ingredients together. Add to creamed sugar mixture. Add milk a little at a time, stirring each time. Mix thoroughly.
    Pour batter into sheet pan or pie tins.
    Bake at 400. (Charlotte's recipe didn't say for how long)
Fruit topping
  1. Apple: thinly slice apples.
    Place on top of batter. Sprinkle with sugar and cinnamon. Dot with butter.
    Bake with apples at 350 for 45 minutes, apples should be tender.
