Chicken and Veggies with Savory Pineapple Sauce

Ingredients
  

  • 4 Chicken Breasts, chopped or sliced thin as desired.
  • 2 tsp Baking Soda
  • 1/4 cup Flour
  • 3 tbls Oil
  • 1 cup Water, or enough to cover chicken
  • 2 cups Chicken stock
  • 2 tbls Miso
  • 4 Garlic scapes, diced2
  • 1/2 Onion, diced
  • 1/2 cup Honey
  • 2 tbls Oyster sauce
  • 4 tsp Corn starch
  • 16-32 oz Pineapple Chunks, with juice.
  • 1/2 cup Sweet Chili Sauce
  • 2 tbls Gochugang optional
More stuff you can to serve with your sauce. Use as little or as much of each as you like. (Eliminate the chicken for a vegetarian version).
  • 1/2 cup Asparagus, cut bite size
  • 1/2 cup Cabbage, shredded
  • 1/2 cup Carrots, diced
  • 1/2 cup Bean Sprouts
  • 1 cup Cashews, halved
  • 1/2 cup Water chestnuts
  • 1/2 cup Bamboo shoots

Method
 

  1. Cut chicken breast into bite size or larger pieces. Put on a bowl.
    Cover with baking soda and water. Mix to thoroughly combine.
    Let marinade for at least 30 minutes while you prepare the sauce.
  2. In a medium hot pan, place in pineapple, garlic and onions. Cook until tender.
  3. Add 1 1/2ccups chicken stock, miso, honey, oyster sauce, and chili sauce. Stir to combine. Bring to a boil.
  4. In a separate bowl, mix the rest of the chicken stock and corn starch.
    Slowly add to the pan of boiling sauce. Cover sauce and turn down to low. Let reduce until thickened.
  5. While sauce is reducing, Drain the water and baking soda off the chicken. Fill the bowl with water and rinse the chicken thoroughly and drain. Repeat this two times.
  6. After draining the chicken and it is is still moist, add the flour and combine to coat all the chicken pieces.
  7. Heat a skillet with oil to medium high heat. When pan is hot, add chicken. Cook until slightly browned and caramelized.
  8. If using additional ingredients, put them all in a skillet and sauté until desired doneness.
  9. Check the sauce. If it is not the desired thickness, turn to high and stir constantly.
  10. If you want a spicier sauce add the Gochujang to the sauce and stir.
  11. Serve Chicken or veggies over rice.
