- Mix spices and oil. Let rest to develop flavors.
- Place pork in a large bowl or pan. Massage oil mix all over pork.
- Pork can be smoked in a pan or directly on the grates.
- Smoke at 225 for 3 to 5 hours depending on the size of your pork shoulder. Internal temperature should be 170 for slicing and 185 for pulling.
