Method
- Combine ginger and water in a saucepan. Bring to a boil then lower to simmer for 30 to 45 minutes. Let cool. Strain liquid.
- Return liquid to pan. Add sweetener. Stir over medium heat until dissolved. Stir in Lime juice and cool completely.
- Fill glass with about 1/4 cup ginger syrup. Top with sparkling water and ice.
- Store syrup in refrigerator for 1-2 weeks.
