Breakfast Casserole

Potatoes and sausage layered on a bed of pancake.

Ingredients
  

  • 1 cup Pancake mix
  • 2/4 cup Liquid, milk, plain yogurt or water
  • 1/2 lb Sausage, Spicy is great
  • 2 cups Potato shreds, cooked partially
  • 1/2 cup Sweet Peppers, chopped
  • 1/2 cup Onion, chopped
  • 1 cup Cheddar Cheese, shredded
  • 4 Eggs
  • Bacon, cooked, crumbled

Method
 

  1. Brush bottom of casserole dish with oil. Mix pancake mix and spread in bottom of dish.
  2. Spread half the sausage over pancake layer. Then top with half the cheese. Top with potatoes. Spread peppers and onions over the top. Add another layer of sausage and cheese.
  3. Pour eggs over the top. And top with bacon crumbles.
  4. Bake at 375 for 20 to 30 minutes.
