Shrimp and Avocado Puff Pastry Sandwiches

Ingredients
  

  • 1 sheet Puff pastry
Shrimp
  • 1/4 lb Shrimp, cooked and chopped Can substitute with canned Salmon
  • 1 tbsp Cream Cheese Or Miracle Whip for a tangier flavor
  • 1/2 tbsp Dill weed, dried Or more to taste
  • Pickled onion strands For topping/garnish
  • Smoked paprika For topping
Avocado
  • 1 Avocado, sliced
  • 2 tbsp Cream cheese
  • 1/2 tbsp Dill weed, dried more or less to taste
  • 1/4 cup Pickled onion, diced thinly
  • 2 tbsp Jalapeno pepper, diced small Can be fresh or pickled.

Method
 

Pastry
  1. Cut pastry into squares. Brush with egg wash.
  2. Convection bake at 375 until golden brown and raised, about 20 to 25 minutes.
    Let puffs cool. Slice in half.
  3. Cut out pastry circles can be cut in half and spread with fillings to make mini sandwiches.
Avocado
  1. Mix ingredients. Spoon into bottom of pastry cups.
Shrimp
  1. Mix all ingredients. Spoon mix on top of avocado mix.
    Top with pickled onion slices and smoked paprika
