Pie Crust

Basic Pie Crust

Servings: 2 Crusts

Ingredients
  

  • 2 1/2 cups Flour
  • 1/2 tsp Baking powder
  • 1/2 tbsp Sugar
  • 1/2 tsp salt
  • 2 cups Shortening. In 1/4" pieces May use 1/12 cups butter instead of shortening.
  • 1/4 cup Butter powder.
  • 7-8 tbsp Water, ice cold

Method
 

  1. Place flour, baking powder, butter powder, and sugar in a food processor and pulse a few times to combine.
  2. Add cold diced shortening. Pulse until coarse crumbs form with peas size pieces.
  3. Add ice water and pulse just until moist clumps form. Press some dough between finger tips. If the dough sticks together there is enough water added. If not add one teaspoon at a time until moist. Do not add too much water.
  4. Transfer dough to a work surface. Gather dough together to form 2 equal size balls. Do not knead dough. Wrap each ball with plastic wrap and refrigerate for at least one hour before rolling out.
