Couscous – Pearl (Israeli couscous)

Ingredients
  

  • Olive Oil
  • 1 cup Pearl couscous
  • 1 1/2 cups Broth or water
  • Lemon zest, optional

Method
 

  1. Toast couscous in medium saucepan. Heat 2 tbsp olive oil until just shimmering. Add couscous and toss to coat. Toast until pearls turn golden brown.
  2. Boil broth. Add couscous. Return to a boil, then turn heat to low and cover. . Season with salt. Cook for about 10 minutes until couscous is tender.
