Mexican Chicken and Rice

Ingredients
  

  • 2 1/2 cups Chicken Broth
  • 1 1/4 cups Rice – uncooked
  • 1 lb Chicken – cut into pieces or strips
  • 1 Onion
  • 3 Sweet Mini Peppers
  • 2 cloves Garlic
  • 2 tbls Taco Seasoning
  • 1 cup Cheddar Cheese – Shredded
  • 1 cup Black Beans – Cooked

Method
 

  1. Cook rice in chicken broth.
  2. Cook chicken in medium hot pan for 3 to 4 minutes. Just underdone.
  3. Saute onions, peppers, and garlic in butter.
  4. Add rice, beans, and vegs to baking pan. Top with chicken and cheese.
    Bake at 350 until bubbling. About 10 minutes.
