Method
- Toast fresh chiles over flame or in an iron skillet until roasted. Remove chiles.
- Sauté onions until softened. Add garlic and cook another minute until garlic is fragrant.
- In a blender add all ingredients and Pulse until smooth.
- If desired, strain sauce. Return to skillet. Heat on high heat to a boil. Reduce to simmer. Cook until desired consistency. Add butter, if using, and stir until butter is incorporated.
