Arbol Pepper Sauce

Ingredients
  

  • 5 oz Arbol chiles, fresh, stems removed
  • 2 oz Onion, chopped
  • 3 cloves Garlic, chopped
  • 1/2 cup Vinegar
  • 1/2 tsp Salt
  • 1-2 tbsp Butter, optional for richer, smoother taste
  • 2-3 tbsp Water
  • 1 tbsp Lime Juice or a pinch of Lime powder
  • 1/4 cup Cilantro, optional

Method
 

  1. Toast fresh chiles over flame or in an iron skillet until roasted. Remove chiles.
  2. Sauté onions until softened. Add garlic and cook another minute until garlic is fragrant.
  3. In a blender add all ingredients and Pulse until smooth.
  4. If desired, strain sauce. Return to skillet. Heat on high heat to a boil. Reduce to simmer. Cook until desired consistency. Add butter, if using, and stir until butter is incorporated.
