Method
- Mix yeast and sugar in warm water. Let yeast bloom. Add egg and mix.
- Add flour to mixer bowl. Slowly add liquid ingredients. Mix until smooth. Dough should seem a bit dry.
- Drizzle bowl with oil. Knead dough in bowl for 2 minutes. Roll dough in oil so it won't stick to the bowl. Cover bowl and proof for 60 minutes or until double in size.
- Place dough on parchment paper. Pat flat and form into a rounded crust. Brush dough with olive oil.
- Preheat oven to convection 400. Bake for 10 minutes. Change to convection Low Broil. Broil until dough is golden brown. About 5 to 8 minutes.
- Remove from oven. Change to convection bake 425. Build pizza as desired. Place in oven for 10 to 15 minutes. If desired, put on low broil for a few minutes.
