Potato Corn Fritters

Ingredients
  

  • 1 cup Mashed Potatoes Left overs work great
  • 2 Eggs
  • 1/2 cup Corn, drained
  • 1/2 cup Flour
  • 1/2 tsp Garlic powder
  • 1/2 tsp Chicken bouillon granules
  • 1 tsp Smoked Paprika
  • 1/4 cup Water More or less as needed
  • Jalapeno slices optional
  • 1/4 cup Onion minced optional

Method
 

  1. Combine all ingredients in bowl.
  2. Cover the bottom of a skillet with oil. Left over bacon fat works great! Spoon 1/4 cup patties into the hot oil. Using spatula to tap patties to flatten out.
  3. Cook for 4 to 5 minutes per side until golden brown.
  4. When done, set aside for a minute to "dry off" the oil.
  5. Serve with sour cream, salsa, or cheese sauce.
